Ingredients
•3 cups flour
•4 tsp baking powder
•1 tsp cinnamon powder
•1 tsp mixed spice
•2 cups brown sugar
•2 whole eggs
•½ cup fruits (raisin/or mixed fruits)
•¾ cup Lasco Lasoy Lactose Free; mixed
•2 tsp Lasco Soft Margarine; melted
•1 tsp lime juice
•1 tsp vanilla
•1 cup Stout
•¼ cup glaze
Preparation
1.Combine flour, baking powder, cinnamon and spice in a bowl.
2.In a separate bowl, combine then beat eggs, lime juice, sugar, margarine, Lasoy Lactose Free and stout.
3.Pour into dry mixture and beat until smooth.
4.Fold in fruits then pour into greased and lined loaf pan.
5.Bake for 1 hour at 350 degrees Fahrenheit.
6.Glaze, cool and enjoy!
Glaze
•¼ cup brown sugar
• ½ cup water
Preparation
Combine in a pot and boil until thick (syrup-like consistency).
